Fresh, lively & a lovely color – this new release of Chinook’s classic dry rosé is a Washington summer favorite. We make our rosé each year from one of our personal favorite varieties: Cabernet Franc. Enjoy it with salty snacks, such as thinly sliced Mangalitsa ham, or spicy nuts. We expect all the 2008 rosé to be consumed this summer & fall!

2007 Yakima Valley Cabernet Franc
For over 15 years, Chinook has produced a Cabernet Franc from our estate vineyard and selected growers' fruit in the Yakima Valley. The 2007 Cabernet Franc is 100% varietal and 100% Yakima Valley AVA fruit. Our hands-on, minimal processing produces a Franc that is soft, drinkable and low in tannins. This remains the most rustic-styled of our wines. To emphasize the recognizable Cabernet Franc characters (cherries, raspberries, licorice, violets) we choose to age this wine in primarily neutral oak.

2005 Yakima Valley Merlot
Packed full of intense flavors; these vines were carefully tended just for Chinook. Chinook Wines has been producing Merlot since 1984, & the vintages just get better with age! For the 2005, aging in French oak barrels rounded out the texture & spiced up the Merlot blend: vanilla, dark ripe cherry or pomegranate are some of the interesting mix of flavors you might find in this wine. Natural food affinities are lamb and some fresh or cheddar-type cheeses.

2006 Yakima Valley Cabernet Sauvignon
New Release! This latest release of Chinook's small-production Cabernet Sauvignon is indicative of the highest Yakima Valley Cabernet quality. Blended from carefully grown vines from Desert Hills and Lonesome Spring, our 2006 shows berryish and rich Cabernet character with an overtone of vanilla bean from aging in barrels. It has just the right amount of bottle age for winter release.

Yakima Valley Red Wine (Blend XI)
This easy-sipping wine is a blend of select vintages of Merlot (40%), Cabernet Franc (31%) & (surprise!) Lemberger (29%). The latest Yakima Red has a delicious, fruity aroma which reminds us of strawberry jam & other ripe fruits. Some of our favorite pairings include cherry marinated grilled poultry & the cheeses of Mt. Townsend creamery.
